I'm an extract snob I admit. Especially when it comes to Vanilla and my cookies. When I first started out baking my Shortycake Cookies I experimented with different brands for each ingredient until I came up with the great tasting cookies you know today.

The vanilla is the key to scrumptiousness! I only use Watkins Double Strength Vanilla-by the gallons!

How To: Cake Balls

Cake balls.
Small coated treats of delectable goodness. 

Many people have raved about them and all have asked
"How do you make them?"
So, here's Shortycake's How To:

Cake Balls 101

Bake and cool your favorite cake.
Crumble the cake in a large bowl-no big chunks allowed..
Add the gooey stuff!
Frosting, peanut butter, jelly, flavored coffee creamer, whatever.
Add a little at a time until the cake mixture is a good consistency to form into balls.
Put the cakeballs on a parchment lined tray .
Put the tray in freezer for an hour or longer (overnight is fine)
When ready to coat them, melt your choice of chocolate:
milk, dark, semi-sweet, white, almond bark, even candy melts and start dipping!
Put the coated cakeballs back on the parchment and let the coating set
Once the coating has dried you are ready to start enjoying a taste of heaven!

(The ones from the Luau had chopped up cherries in them! Yum!)

Cookie Names. What Gives?




I'm drinking my morning cup of energy and compiling my list of cookies and baking supplies for the day. Chocolate chip, White Chocolate Mac Nut, Color-coated chocolate pieces cookies (yes, yes, yes, they are what you think), and Snickerdoodle.

On a side note, these are great cookies to have little helpers in the kitchen with you! Let your child build their own culinary masterpieces with cooking kits and accessories. I know when B wakes up it'll be "I help Mommy make cookies"...over and over and over.

Snickerdoodle. 1. There is nothing in this cookie that remotely resembles a Snickers, nor does it make me snicker. 2. There's no doodle on it either. So I searched for the origin of the famous Snickerdoodle. Wow does everyone have an opinion on that! It appears that every country has taken claim to being the origin of the Snickerdoodle...but no one knows for sure.

This has me wondering...what other cookies have names that don't give a clue what they are? Leave a comment with the ones you know of.

Food Network Cupcake Wars!

About a week ago, one of my favorite channels, FLN, switched to the Cooking Channel. I love The Food Network and all the delectable food creations it highlights. But with two dedicated channels to food I thought, ah but briefly, that "Whoa-too many food channels.  What more can they (channel execs and creatives) come up with?". 

Two words, one title, one network: "Food Network Cupcake Wars". Yep, a competition show about cupcake creations.


Here's my two cents on this: I pray this new competition doesn't do to cupcakes what it did to cakes. What is that you ask? Well, as the "Food Network (insert category here) Cake Challenges" pushed decorators to creative extremes, thus producing some of the most gorgeous cakes imaginable it also steered the focus from great tasting cake/frosting combos to the realism and detail of the fondant work matching the bride's favorite purse (or whatever the challenge).  I love purses. I love shoes. I LOVE cake. But really, is there anyone out there that LOVES the taste and texture of fondant or loves to eat purses and shoes?


Yes, yes, yes. I use fondant detailing on my Shortycake Creations cookies and cupcakes but here is what goes through my mind as I work with it: "Ugh, this stuff smells disgusting and tastes nothing like what frosting/icing should. I'm glad the detailing I do can be popped off easy with a fork before consumed." But I digress.


Will this new show jump the shark with cupcakes? Has the cupcake craze actually been a subliminal outcry of cake lovers wanting their cake and delicious frosting too? Only time and about 3000 episodes will tell.
